What is the first wort? What are the operating points of the first wort filtration?
 
The wort filtration process can be roughly divided into two stages:
The first stage uses the lees as the filter layer to separate the wort in
the mash. This part of the wort is called the first wort or the top wort;
The second stage is to wash out the soluble extract remaining in the
spent grains with hot water, and the obtained wort is called the second
wort or washed grain wort. The operation points of the first wort
filtration are as follows.
 
①Pour in hot water from the bottom of the filter tank, so that the space
between the filter plate and the bottom of the tank is filled with hot
water (water temperature 76~78℃), and the water surface just has no
filter plate to remove the air in the bottom space.
 
②Pump the mash into the filter tank, and start the tiller to mix evenly.
 
③ Let stand for 15-20 minutes to allow the grains to settle on the filter
plate to form a filter layer.
 
④ When the filtration starts, alternately open and close the wort valve
or the central filter tube, discharge the turbid wort and pump it back to
the filter tank to filter again until the wort is clear, and the circulating
reflux time takes 5 to 10 minutes.
 
⑤Open the filter cock in turn to control the flow rate of the wort, and
formally start the filtration.
 
⑥After filtering for a period of time (about half of the total filtering time
of the first wort), the filter layer is tight, the resistance increases, and
the outflow rate decreases significantly. At this time, the filter cock
should be closed, and the tiller should be activated to loosen the filter
layer slowly.
 
⑦Restart the filtration and pump the turbid wort that was filtered out
back to the filter tank until the wort is clear. The filtration continues until
the lees is just exposed, and the first wort is filtered.
