Rum is a spirit produced from sugarcane distillates such as molasses, sugarcane juice, or sugarcane syrup. The base ingredient is fermented to create a wash, which is then distilled in a pot or column still.
The resulting liquid can be aged in oak barrels to develop a unique set of flavours, colours, and characteristics. Rum must be bottled at a minimum of 37.5% alcohol by volume (ABV) according to European standards and 40% ABV under U.S. regulations, with certain high-proof varieties reaching up to 75% ABV.

Here we introduce four kinds of Rum, they are Light Rum, Heavy Rum, Aged Rum and Unaged Rum. Let’s check the details:

1.Light Rum

What is Light Rum?

Light Rum is made by fermenting molasses or cane juice. In general, a shorter fermentation yields a wash that is higher in alcohol yet lower in flavour compounds. The liquid is then distilled in a column still, which produces a higher alcohol content up to 95.8% ABV.
The clear colour and light, smooth neutral profile makes a Light Rum a highly versatile spirit that is ideal for cocktails such as Mojitos, Daiquiris, and Piña Coladas.

Light Rum is also known as white or silver Rum. Typically produced from molasses in a column still, Light Rums are clear, light, and neutral. This makes them a highly versatile component for blending, entry-level Rums and as a base for both spiced Rums and ready-to-drink products.

2.Heavy Rum

What is Heavy Rum?

Heavy Rum is produced from either molasses or cane juice. An extended fermentation process produces a more flavourful wash, allowing the complex flavour compounds and esters to build up.
Distillation in traditional pot stills further enhances the spirit’s distinctive depth and character. At the same time this process reduces the alcohol content, which ranges from 60-85% ABV. Heavy Rums can be fruity, spicy, or even cheesy with a powerful, intense character that sets them apart.

Heavy Rum is recognisable for its powerfully intense character derived from the high level of flavour compounds. Used as blending component, Heavy Rum also remains a popular and potent choice for cocktails and a common ingredient in the confectionery and flavour & fragrance industries.

3.Aged Rum

What is Aged Rum?

Like any other Rum, Aged Rum starts with a sugarcane-derived distillate such as cane juice, syrup, or molasses. The base ingredient is fermented by adding yeast to create a “wash,” a liquid containing alcohol and other impurities. The wash is distilled to separate the desired spirit from unwanted compounds.
The Rum is then matured in wooden casks usually made from American or French oak, or even old Sherry casks. The process can take anything from a few years to decades, during which time the Rum absorbs the characteristics of the oak barrels, takes on a darker colour, and produces a rich and complex flavour.

Enjoyed by connoisseurs and casual drinkers alike, Aged Rum has matured in wooden barrels for a few years or even decades. Over time, this premium spirit absorbs the characteristics of the wood to produce a deep, rich and complex flavour and dark colour that also make it suitable as a blending component.

4.Unaged Rum

What is Unaged Rum?

Unaged Rum is produced in the exact same way as any other Rum, with the cane juice, cane syrup, or molasses fermented by adding yeast to create a “wash” – a liquid containing alcohol and other impurities.
The wash is distilled in either a pot or column still, separating the desired spirit from unwanted compounds. Unlike Aged Rum, the final spirit can be bottled immediately without resting in wooden barrels. This results in a clear liquid ideal for blending, which may also be coloured using Caramel E150.

Free from the transformative influence of barrel aging, Unaged Rum captures the very essence of the raw sugarcane distillate base and represents the purest expression of the drink. It can be fresh, fruity and naturally sweet, with pot still adding a funky complexity.
