What is watermelon wine?
Watermelon wine is a fruit wine brewed through a fermentation process using fresh watermelon as the main raw material. It retains the sweetness and fruity aroma of watermelon, has a light and smooth taste, and the alcohol content is generally controlled between 5% and 12%. How is watermelon wine brewed?
The brewing process of watermelon wine is similar to that of general fruit wine, but it is more targeted in pre-treatment and fermentation control. The following is a typical watermelon wine brewing process:
1. Material preparation
Fresh and ripe watermelon (choose varieties with high sugar content and strong aroma)
Yeast (it is recommended to use special yeast for fruit wine)
Enzyme preparation (pectinase, used for breaking the wall and extracting juice)
Acidity regulator (citric acid or lactic acid)
Sugar source (if necessary, white sugar, honey, etc. can be added)
Sulfite (for sterilization)
2. Crushing and juicing
Peel and deseed the watermelon and crush it, and use a pressing equipment to squeeze the juice. Tiantai Company provides fruit juicers of various specifications with high efficiency, less residue, and ensure the purity of the juice.
3. Blending and sterilization
Mix the squeezed watermelon juice with appropriate acidity and sugar content (Brix value is generally between 18-22), and add appropriate amount of sulfite for preliminary sterilization. If necessary, use plate sterilization equipment for low-temperature sterilization.
4. Fermentation
Transfer the treated juice into the fermentation tank and inoculate with yeast. The fermentation temperature is controlled between 16-22℃, and the main fermentation lasts for 7-14 days. Tiantai provides stainless steel fermentation vessels with automatic temperature control to ensure a stable and safe fermentation process.
5. Post-fermentation and aging
After the main fermentation is completed, the tanks are changed and precipitated, and the post-fermentation and aging period begins, which generally takes 1-2 months to improve the flavor and stability.
6. Filtration and bottling
Use diatomaceous earth filters or cross-flow membrane filtration systems to clarify and filter the finished wine to ensure a clear and bright appearance. Then, the wine is bottled and sealed through automatic filling equipment to achieve an integrated packaging process.
Watermelon wine brewing recipe (reference):
Ingredients-dosage (per 100L)
Watermelon juice: 100L
White sugar: 5~10 kg (depending on the sugar content)
Yeast: 20~30 g
Yeast nutrients: 20~50 g
Pectinase: 30~50 ml
Citric acid: 100200 g (adjust pH to 3.23.5)
Potassium bisulfite: 50~100 mg/L
