1. Recommended Banana Must and Sorghum Ratio
There is no fixed standard formula for banana beer, as the recipe may vary depending on the desired alcohol content, taste, local raw materials, and production method.
For an industrial banana beer production line using banana and sorghum as the main raw materials, a recommended starting point is:
Banana Must / Pulp : Sorghum Wort = approximately 70 : 30 by volume
For raw material consumption, a practical reference ratio is:
Fresh Banana : Sorghum = approximately 3 : 1 by weight
For example:
- Fresh Banana: 1,000 kg
- Sorghum: approximately 300–350 kg
The final recipe can be adjusted according to the required product flavor and alcohol content.

2. Production Capacity Based on 500 kg/h Banana Processing
Assuming the fresh banana processing capacity is:
500 kg/hour
And the plant operates:
8 hours per day
The daily fresh banana processing capacity will be:
500 kg/h × 8 h = 4,000 kg/day
After peeling and pulping, the usable banana pulp yield is estimated at approximately 60–70%.
Therefore, the expected banana pulp production will be approximately:
2,500–2,700 L/day
After mixing the banana pulp with sorghum wort, process water, and other ingredients, the estimated final banana beer production capacity can be approximately:
5,000–6,000 liters per day
For preliminary equipment design, we recommend designing the system based on:

3. Recommended Main Tank Capacities
Banana Pulp Mixing Tank
The mixing tank is used for blending:
- Banana pulp or banana must
- Sorghum wort
- Process water
- Sugar or other ingredients, if required
For a production capacity of approximately 5,000–6,000 L per day, a batch production system is recommended.
Recommended tank size:
- Working volume: approximately 3,000 L
- Total tank volume: 4,000 L
Therefore, we recommend:
1 × 4,000 L Mixing Tank
Sorghum Mashing and Saccharification Tank
Based on approximately 1,200–1,500 kg of sorghum consumption per day, the production can be divided into two batches.
Each batch will process approximately:
600–750 kg of sorghum
After mixing with water, the total mash volume will be approximately 2,800–3,500 L.
Considering sufficient headspace and operational flexibility, we recommend:
1 × 4,000–5,000 L Mashing / Saccharification Tank
Fermentation Tanks
The fermentation tank capacity depends mainly on the fermentation cycle.
Assuming:
- Daily production: approximately 5,000 L
- Fermentation period: 3–5 days
The total required fermentation capacity will be approximately:
20,000–25,000 L
We recommend either:
Option A: 5 × 6,000 L Fermentation Tanks
or
Option B: 4 × 8,000 L Fermentation Tanks
This configuration allows continuous daily production and provides sufficient flexibility for cleaning and maintenance.
