What is membrane filtration technology for microbrewery?

Membrane filtration is also called microporous membrane filtration and membrane separation.Membrane separation technology is a new and high technology developed from 1960s. It uses selective permeation membrane as the separation medium. When there is a certain driving force (pressure difference, concentration difference, potential difference, etc.) on both sides of the membrane, the components on the raw material side selectively permeate the membrane (for example, small molecular substances permeate the membrane, while large molecular substances or solid particles are blocked and intercepted), so as to achieve the purpose of separation and purification.

The membrane separation technologies that have been applied in large scale include osmosis, reverse osmosis, ultrafiltration, microfiltration, dialysis, electrodialysis, gas permeation, etc. Among them, microfiltration, ultrafiltration, reverse osmosis and electrodialysis are relatively mature, which are called the first generation membrane technology; gas separation membrane technology is called the second generation membrane technology; pervaporation is called the third generation membrane technology.

The porous organic membrane, which is made of synthetic fiber and plastic with strong biological and chemical stability, is often used as the filter medium. The thickness of the membrane is 0.5 ~ 1.5um, and it is often combined with another thick porous support membrane. The total thickness is 0.125 ~ 0.25mm, the pore diameter is 0.025 ~ 1.40um, and the porosity (the pore accounts for the total membrane area) is about 80%. Due to the high porosity, the filtration rate is very fast.

Breweries usually use microporous membrane with pore size of 1.2um, which can filter yeast. If it is necessary to filter bacteria, it needs membrane with pore size of 0.8um or 0.6um or even smaller. Membrane filtration is mainly used for fine filtration, brewing sterile fresh beer. Before filtration, the wine was filtered by centrifuge or diatomite filter, and then the bacteria were removed by membrane filtration.

The membrane filtration method can save the thermal sterilization process of beer before or after filling. It has the advantages of simple equipment, energy saving, high separation efficiency, less product loss, low production cost and easy automatic control. Membrane separation is usually operated at room temperature, without phase change, which improves the stability and foam stability of beer, and there is no residue in filter media.
