Pot Still:
A pot still is a traditional still used for distillation. It consists of a large pot or boiler where the fermented liquid (mash or wash) is heated. As the liquid is heated, alcohol vapor rises through a column and reaches the top of the still.

Column Still:
A column still, also known as a continuous still or column distillation, is a more modern type of still that allows for continuous distillation. It consists of a tall vertical column with multiple plates or trays. The fermented liquid is introduced at the top of the column, and as it flows downward, it encounters rising steam. The rising steam causes the alcohol to vaporize, and as it moves up through the column, it condenses on the plates and is collected at different stages of purity.

Hybrid Design:
The hybrid still combines elements of both the pot still and the column still. It usually has a pot-like base where the fermented liquid is initially heated, similar to a pot still. However, the still also includes a column section with plates or packing material, similar to a column still. The combination of the pot still and column still allows for more flexibility in the distillation process and greater control over the final product.

Reflux:
One of the key features of the column section in a hybrid still is the ability to control reflux. Reflux is the process of condensing and refluxing some of the vapor back down the column. This action helps purify the vapor, separating the different components (e.g., alcohol, water, and congeners) based on their boiling points. By controlling the reflux, the distiller can achieve a higher level of purity in the final distillate.

Copper Construction:
Many hybrid stills, like traditional pot stills, are made of copper. Copper is an excellent material for distillation equipment because it helps remove unwanted sulfur compounds and other impurities from the final spirit, resulting in a smoother and more refined product.

Condenser:
A hybrid still includes a condenser where the vapor is cooled and condensed back into liquid form. The condenser can be air-cooled or water-cooled, depending on the design of the still.

Hybrid stills offer distillers the ability to produce a wide range of spirits with different characteristics. By adjusting the distillation process and the reflux ratio, distillers can create spirits with varying levels of purity, flavor, and aroma.
