Grain whisky is a versatile and widely produced style of whisky made from a mixture of grains such as corn, wheat, barley, or rye. Unlike single malt whisky, which uses only malted barley, grain whisky is often produced using continuous distillation systems, making it more efficient and scalable.
- Raw Material Selection and Milling
The process begins with selecting grains such as corn or wheat, which are often used as the primary fermentable base. Malted barley is added in smaller quantities to provide the enzymes needed for starch conversion.
The grains are milled into coarse flour using a roller mill to prepare for mashing.

- Mashing and Cooking
The milled grains are mixed with hot water in a cooker or mash system. Since grains like corn require higher gelatinization temperatures, the mash is typically heated in stages.
Enzymes from malted barley break down starches into fermentable sugars, producing a sweet liquid known as wort.
- 発酵
The wort is cooled and transferred into fermentation tanks. Yeast is added to convert sugars into alcohol.
Fermentation usually lasts 48–96 hours, producing a low-alcohol liquid (around 8–10% ABV). Stainless steel fermenters with temperature control are commonly used for consistency and hygiene.
- 蒸留
Grain whisky is typically produced using a continuous column still (Coffey still or multi-column system).
Continuous distillation operates at steady feed, producing 90% \sim96% ABV spirit
This system allows for large-scale, efficient separation of alcohol from impurities, producing a lighter and cleaner spirit compared to pot still distillation.
- 成熟
The distilled spirit is diluted to around 63–65% ABV and aged in oak barrels for at least 3 years. During maturation, the spirit develops color, aroma, and complexity through interaction with the wood.
Grain whisky production is a highly efficient process that combines modern engineering with traditional aging techniques. Its use of continuous distillation and diverse grain sources makes it a key component in blended whisky production and an important category in the global spirits industry.
